If the eggs are small, it's best to use 3 eggs. I once made them with a large bag of milk and 2 egg whites, but it was not very successful.
Be sure to cool the milk before returning it to the pan and add the egg white, otherwise the hot milk will turn into chunks when added with the egg white.
